Our bariatric team was recently tasked with finding the best low-carbohydrate freezer meals for patients who were mainly cooking for 1. We also know that cooking after surgery can be a challenge with the small portion of food our patients eat. It’s just not that easy to modify a recipe for such a small portion, and sometimes the effort just doesn’t seem worth it- especially if the recipe has 27 ingredients.
Here you will find the first post in a series of posts about Cooking-for-1 that will include ways to create nutritious and low-carbohydrate meals for 1 (or 2) people with little work.
Shopping for Freezer Meals:
After 45 minutes of standing in the freezer section at Wal-mart, we have concluded that there just aren’t many freezer meals that are low-carbohydrate! 95% of the meals include grains, such as rice, quinoa, pasta, or potatoes. Of the 10% without grains, about 7% are very high in carbohydrates. (This is usually due to the sauce.) Although we will share this 3% of freezer meals with you below, we have found that the best option is to use a combination of freezer/canned ingredients and spices to create a low-carbohydrate meal of 1-2 servings.
