We have fallen in love with this low carb version of pizza, courtesy of The Schmidty Wife! It’s perfect for those who have had bariatric surgery because it replaces the carb-laden crust with a protein-rich chicken breast, giving you at least 2 sources of protein including the cheese, even more if you top it with pepperoni, ham, or sausage.
Make sure to get thin-sliced chicken breasts, or pound your normal chicken breasts out to make them about the thickness of a pen.
Also, don’t substitute the tomato paste for anything else! If you use something that has a thinner consistency, you will end up with a soupy mess!
